Elderberries!



I have been working day and night and sleeping little, so there isn't much fun to report. Since Jan 1. I have worked out seven times! Woohoo! And I have been taking vitamins! Yay! My big excitement this week has been the successful creation of Elderberry Jello. A few years back I bought this book on how to make your own herbal concoctions. It contains all sorts of recipes, but the most fun is the idea to make your herbal teas into jello. Yum!

I combined Elderberry juice (Beorn and I juiced some elderberries last summer and froze the juice in our chest freezer), much loved for it's supposed antiviral properties, with sugar-free black cherry jello to create a semi-healthy treat. Tonight I had some with a little cool-whip.

If you're lucky, the elderberries ought to just cancel out the negative effects of the aspartame, high fructose corn syrup, artificial colors, and hydrogenated oils in the jello & cool-whip. ;-P

But all high-horse ribbing aside, making your own herbal concoctions sounds really cool!

LOL! I know, don't tell my mom. What's weird is that the guy writing the herb book endorses using sugary jello as a carrier for your herbs. Most herbalists are against ingesting refined sugars, let alone high fructose corn syrup. I think you could make something somewhat more healthy if you used agar-agar or unflavored gelatin and a little real whipped cream. I thought about making my elderberries into cough/cold syrup, but I don't like sugary syrup very much. How about elderberry popsicles or a summer cold?

Sounds delicious! As a note, my site links to a recipe for elderberry syrup that calls for only elderberries and honey, which might be more to your liking if you prefer less sugar. :)
